Well, I got to "Finishing Up" and -- good news -- this showed correctly on first test:
BUT ... when I tried to Replace the UnhashedKeys.stbl file, I didn't get any "Yes" option. It just flashed, then went away. But the UnhashedKeys.stbl looked correct, so I then changed the English strings. Sadly, though, on test 2, I got exactly the same result -- JoinCareer13626835993608561127, rather than Join Librarian Career. The strings look right in the career package. So I'm stumped.
I also tried the final steps following Croen's tut -- i.e., changing the UnhashedKeys.stbl directly in the Edit Stbl in s3pe. No go.
It has to be the Replace not working, but I don't know what I'm not getting that option. It worked in the early steps of your tutorial.
Will greatly appreciate any suggestions on how to fix this. Thanks in advance!

The replace will have worked perfectly fine. It's most like one digit left off when copying the number into the unhashedkeys, language strings or possible both. Try writing the number out on a notepad file, then copy that into both the unhashedkeys and language strings. Then replace the unhashedkeys again and reimport that into your career package. Also, make sure you did replace the career package in your Mods folder with your new one Trust me, this is so common.

The numbers were correct. Everything looks right on paper, but I've obviously done something wrong as I still get to the end with just the "JoinCareer13626835993608561127" showing when I click on the rabbithole. Think I'll just go pull my hair out and be done with it.

I had done that happen to me with my Warehouse 13 career. I even deleted the whole thing and started over and I still couldn't get rid of the numbers until I went back to all my files (careers.xml, image, tones and stbl files included) and removed the empty space from the career name. It was "Warehouse 13" and I turned it into "Warehouse13" everywhere. Then replacing the numbers suddenly worked, even though Missy's Estate Agent career has an empty space in the career name. If you're at your wit's end, why not look for an errant blank space somewhere? Even at the end of each line of code. It's insane but those blank spaces can appear anywhere.

Thanks for the tip, TigerCat! So glad to know I'm not the only one this has happened to. I've been losing my mind over it. My career name is Librarian, but perhaps I had a space somewhere else, so I'll give it a look after I've had a breather.

No problem. I remembered the spaces being an issue suddenly and thought I'd give you a heads up in case you got a similar problem. Unlike typos or forgotten < and >, the game doesn't pop up an error for errant spaces (or, at least my game doesn't) so maybe it wasn't something you've looked for yet.

spuffy, I've sent a message back to you but I'll pop it on here too in case anyone gets this problem. Don't forget to change the first two numbers of the Instance ID after you hash it when you add your language strings in. So for English this is 00, such as this: 0x494292A286440200 to this: 0x 004292A286440200. If you forget this step, the game doesn't recognise what language you're working with and won't acknowledge your language strings. Hence the numbers being persistent. T1gerCat - thanks for the input. Spaces don't generally produce errors, so it's always good to double check for typos

Missy - Not for the current world I'm in. I usually replace/add to rabbitholes with playable lots and the rabbit rugs/doors. But for some insane reason, I decided to go all rabbity with this world, so linked this career to the school. I also did a second flavor linked to the bookstore, which is the one I have placed in the library lot. Maybe down the road, when I get bored with rabbitholes again, I'll use the Ultimate Careers mod and play it with that.
